Imported food is very expensive in Rwanda. Local food is much more reasonable, but nevertheless, even $2/day per person becomes unsustainable when you consider that all our children plus staff and visitors are depending on the financial gifts of generous friends. Restaurants are out of the question and even processed food is kept to a minimum. Food has to be bought or bartered for at the market and prepared at home. Now that we have settled at Lakeside, we are preparing not only for self-sufficiency, but a diet based on natural organic food.
Chicken and Egg
We started raising chickens last year and it is slowly getting off the ground despite a few mishaps along the way. Finally we have some chicks. We are going to build a bigger chicken run at Lakeside and move the stock down there soon. The children are always eager to collect the egss for us.
